Dry Processed Coffee
Dry processed coffee has more body and less
acidity than washed coffee and it can add to the sweetness of the finished
coffee. Most
Brazil
coffees are dry processed as well as
Ethiopian Harrar and Yirgacheffee coffees.
In the dry processed method the whole coffee cherries are allowed to dry in the
sun in their natural state. The
entire ripe cherry as it comes off the tree receives only minimal processing,
usually sorting to remove unwanted fruit and debris. As the cherry dries it shrivels up
and the dried fruit is then milled to remove the cherry skin and dried pulp and
parchment. The finished green bean
is now ready for storage or shipment.
